5 September 2004. Modern Thai Food is manufacturing its new range of Thai Original sauces in Suffolk, at the Foodskills Centre of Otley College, near Ipswich. It is thought to be the first Thai-style product range to be made in Suffolk. "Being able to use the food manufacturing facilities of Otley College on a commercial basis has given us a flying start," said John Lewell, sales and marketing director of Modern Thai Food. "Not only do we get a top-quality, industrial-standard process facility, but we can also call upon the expertise of Otley College staff, which includes chefs, food scientists and other specialists." Modern Thai Food is one of several manufacturers to use the facilities at Otley College, others making jellies and baby foods, using the same facilities on a rotational basis. "With new brands such as Thai Original coming to us, we're expanding the Foodskills Centre substantially," said the Centre's Manager Paul Barnes. "We've made an investment and we're trebling the size of the building which will be completed before the end of the year." The Foodskills Centre Funded by the Learning & Skills Council, the Foodskills Centre at Otley College provides a range of flexible learning opportunities to meet the needs of people primarily in the rural community. Its facilities include a product development kitchen, a food processing hall, conference and lecture rooms, technical support, advice & consultancy, food analysis, marketing support and training. Thai Original Sauces Available in six flavours (Garlic, Lemon Grass, Ginger, Orange, Pineapple and Coriander), the Thai Original sauces are already popular in East Anglia where, on average, eight out of every ten people who have tried them at Farmers' Markets and local food fairs have purchased them. Developed by Framlingham-based food writer Oi Cheepchaiissara, author of the best-selling cookery book "The Food of Thailand," the Thai Original range is now in over 70 outlets in East Anglia, London and parts of the South-East.
