5 September 2004. Modern Thai Food today launched the "Thai Original" brand of food products at the Speciality & Fine Food Fair (Olympia, 5-7 Sept 2004). The new brand makes its debut with a range of sauces for serving with English food such as sausages, hamburgers, poultry, game, smoked fish or cheese. "Our focus is on quality and authentic taste, and we add a touch of originality," said Oi Cheepchaiissara, author of the best-selling cookbook "The Food of Thailand," who is responsible for product development at Modern Thai Food. "Whereas traditional Thai sweet chilli sauce is garlic-flavoured, we also use fruits and Thai herbs, such as coriander and lemon grass, to add variety to the range." Thai Original Sauces There are six flavours of Thai Original sauce: Garlic, Lemon Grass, Ginger, Orange, Pineapple and Coriander. Of these, the Garlic and Lemon Grass are slightly hotter than the others, which are mild but full of flavour. "We go for flavour rather than heat," said Oi Cheepchaiissara. "You serve Thai Original sauces with meat or fish, but they're also great with spring rolls or stir-fries, and delicious with cheese or mixed into salads." Food lovers in East Anglia, where the sauces are made, certainly agree with her -- as around eight out of every ten people who have tried them at Farmers' Markets and local food fairs have bought them. The Thai Original range is now in over 70 outlets in East Anglia, London and parts of the South-East. The sauces have already been featured on television, having been selected by British Master Chef Mark Baumann in his recent series for ITV Anglia "Baumann Goes to Market." Cooking a pigeon dish on his visit to Alder Carr Farm he used the orange-flavoured Thai Original sauce as a glaze. Availability Thai Original sauces are currently available in a single size (175g) for domestic use, but will shortly be provided in larger sizes for restaurants and caterers. Customers will soon be able to purchase the six flavours online at www.modernthaifood.com -- a site that also showcases the food art of Oi Cheepchaiissara. Thai Original sauces are available in top delis, butchers and farm shops, including Kent and Sons (St John's Wood); Jeroboams (Holland Park); House & Garden (Snape Maltings); The Food Company (Marks Tey); and Willow Farm Shop (London Colney).
